He sought out a mentor to help him, and managed to land none other than Giuseppe Quintarelli, the Da Vinci of Amarone. Initially, Quintarelli was famously unimpressed with Romano's vineyard sites, stating that it was \"fit only for corn,\" but of course that would change. Together the two would elevate themselves, the region, and the style of Amarone to new heights, and they remain, to this day the absolute benchmarks for the style.\u003c\/p\u003e\n\u003cp\u003eProduced using the \u003cem\u003eappassimento\u003c\/em\u003e process in which grapes are partially dried prior to fermentation, Amarone's a rich, bold and structured wines and Dal Forno's is no exception.
