He has continued to inovate and push the winery forward over the years, introducing organic farming, then biodynamics, and whole-cluster fermentations. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eGrapes are harvested by hand before going through a strict selection process, before gently being pressed and fermented with wild yeast.
