This vineyard is one of the last reminders of an old California. The Palomino grapes were harvested on August 13th, and the grapes were left to soak on the skins for 12 days before being pressed. The juice fermented with native yeast in old French oak barrels and aged on lees for 8 months. This wine was then bottled with minimal sulfur, and without fining or filtration.\u003c\/em\u003e\u003c\/p\u003e\n\u003cp\u003eScar of the Sea is the wine project of Gina Giugni and Mike Brughelli, who began their winery with the goal of crafting wines that are influenced by the sea and that showcase the Central Coast of California.
