The wines were indigenously fermented and matured in spent Burgundian barrels for 15-20 months before being bottled unfined and unfiltered. \u003c\/p\u003e\n\u003cp\u003eQuite reductive at first, but with aromas and flavors which unfold over time, the wine shows white peach, apricot, nectarine, honeysuckle, and salty lemon juice.
