In the famed Sancerre village of Chavignol, Gerard Boulay and his ancestors have been making wine as far back as 1380. He farms his vines (the youngest of which were planted in 1972) organically, utilizing wild fermentation, and little to no SO2 during vinification, stating that he wants "to let the wine live."
His Chavignol wine is produced from vines located on a hillside with Kimmeridgean limestone soil (the same soil type as found in Chablis). He manually works the soil and hand-harvest with grapes, which after their wild fermentation, are aged for 8 months on lees (95% in stainless, 5% in spent wood).
Bright and crisp with guava, tangerine, lime peel, white flowers and tarragon, the wine has snapping acidity and an almost chalk like mineral quality, leading to a complex and long finish.
