Barolo Chinato

Chinato is a traditional aromatized wine from Piemonte in Northwest Italy. Its sweet (but not too sweet) and laced with bitter and herbal notes. Generally served as an aperitif.

Cappellano is one of the most renowned producers of Nebbiolo in Piedmont. The winery began in 1870 when Filippo Cappellano established it. Upon his death, his son Giovanni took over, and the winery has passed through a total of five generations, all the way to Augusto Cappellano, who helms the project today, and continuing to grow the renown of his family name. Their Barolo Chianti was created in 1890 by Dr. Giuseppe Cappellano (Giovanni's brother)—a pharmacist by trade—who made it as a digestive aid, this is a slightly fortified, aged Barolo, that has been infused with herbs spices and a bit of sugar. The recipe has remained unchanged since its early days, transferred generation to generation by written letter, and even now, Augusto, utilizes the family's antique cast-iron mortar and pestle to hand crush the spices and herbs for the blend. 

All that archaic work, however, shows up in the most magical way with this sublime wine, which is laced with cardamom, cocoa, clove, orange peel, caramel, gentian and rhubarb.
